BBQ Beef Tacos

What you will need:

500g Beef Mince, 1/3 TSP Ground Coriander, 1/3 TSP Fennel Seeds, 1 TSP Paprika, ½ TSP Black Pepper, An Onion, 2 Cloves of Chopped Garlic, 1 TBSP Tomato Puree, 1 TBSP Worcester Sauce, 1 TBSP Soya Sauce & 1 TBSP of The Grazing Company Spicy Tomato & Caramelised Onion Chutney from our range.

What to do:

Fry beef mince in a little oil. Add spices, salt and onion and stir well until mince has started to cook through. Add garlic and tomato puree and continue to cook until liquid from beef has started to reduce. Add in Worcester and Soya Sauce, chopped tomatoes and Spicy Tomato & Caramelised Onion Chutney. When the liquid in the pan has reduced off, add a further 100ml of water. Simmer on hob or put in the oven on a low heat for 45 mins until it is thick. Taste check. Serve on tortilla wraps or in tacos with optional extras of sour cream, grated cheese, lettuce, fresh chopped tomatoes, red onion, butter beans and guacamole.

Coming Soon… Quick Lemon Meringue Pie Recipe

Coming soon to our Online Shop is The Grazing Company Zesty Lemon Curd. Made with fresh lemon juice and butter – a perfect accompaniment to afternoon tea or as a filling for the perfect lemon tart. See our recipe below to make a quick, easy and delicious lemon meringue pie.

What you will need:

Cooked Sweet Pastry Case, 4 Egg Whites, 225G Caster Sugar & two jars of The Grazing Company’s Zesty Lemon Curd.

What to do:

Preheat the oven to 200°C, gas mark 7. Remove the packaging on a shop bought sweet pastry case, and place the tart case on a baking sheet. Spoon the two jars of zesty lemon curd into the tart case and level. Put the egg whites in a large bowl and whisk until soft peaks form when the whisk is removed. Add the sugar to the egg whites, a little at a time whilst continuing to whisk until the meringue becomes stiff and glossy. Spoon the meringue on top of the filled tart case and spread to evenly cover. Bake for about 5 minutes or until the meringue is golden. Serve warm or cold.

Coming Soon… Boozy Mince Pies Recipe

Coming soon to our Online Shop is The Grazing Company Boozy Mincemeat. A traditional, richly fruited favourite, with a boozy hit which does not contain suet. This traditional mincemeat makes perfect mince pies every time. With rum, rich fruit and spices, it’s the taste of Christmas in a jar (or better still, in a pastry case.) See our recipe below to make boozy mince pies for everyone to enjoy this Christmas.

What you will need:

The Grazing Company Boozy Mincemeat, 225G Plain Flour, 140G Butter Cut into Cubes, ½ Level TBSP Icing Sugar, ½ Level TBSP Caster Sugar, ½ Pinch of Salt, 2 free range egg yolks, 2 to 3 TBSP of very cold water.

What to do:

Preheat your oven to 180 c. If you are using a food processor – whizz the flour, icing sugar, caster sugar and salt for a few seconds. Add the cold butter and whizz until it resembles breadcrumbs. Add the egg yolk and whizz slowly then gradually add the water until you form a dough (you might not need all the water). If making by hand – mix the flour, icing sugar, caster sugar and salt together then rub in the butter until the mix resembles breadcrumbs. Using a knife to stir, add the egg yolk and then the water until the mix forms a dough (you might not need all the water). Cover or wrap the pastry and chill in fridge for 30 minutes. Split the pastry in half. Lightly roll out half of the pastry and cut into circles to line the tin. Grease the muffin tin with a little butter then place the circles in. Place a heaped teaspoon of The Bay Tree Boozy Mincemeat in each pie. Roll out the other half of the pastry and cut into little star shapes. Top our mince pies with the stars and brush them with egg yolk. Bake for 15-20 minutes or until golden brown. Once cooked dust the tops of your mince pies with icing sugar and serve.
